OUR TERROIR
The vines take root in Montilla’s albariza soils
The soil where the vines take root is limestone-rich, highly permeable and low-yielding, allowing for long, balanced ripening.
The landscape of Montilla, with its gentle hills covered in vineyards, is the origin of fresh, elegant and characterful wines.


OUR SIGNATURE GRAPE
Thriving in heat and rich in sugars: the pedro ximénez grape
Delicate and fresh, the pedro ximénez variety shows a complete affinity with the landscape. Rich in sugars, it produces dry finos with 15 degrees of natural alcohol and sweet wines of harmonious depth.
Alongside it, there is room for minority varieties that we call ‘vidueños’ and that play a leading role in the production of some young wines: airén, torrontés, moscatel and baladí-verdejo. When the grapes turn gold and bronze, it is time for the harvest.
OUR WINEMAKING
Youth in the traditional vats
The fermentation of the year’s wine culminates in traditional cement vats. It will be bottled as a young white wine or transferred to oak casks to become a fortified wine. Its qualities and our experience decide.
